Beautiful local apples from Brooksby are poached in honey, spices, and lemon zest and then placed atop a layer of apple pie spice pastry cream that has been nestled into our flaky croissant dough. A super buttery and crunchy brown sugar topping made from craquelin is then sprinkled all around the top to bring a layer of crunch and buttery richness.
Ingredients: Local apples, honey, sugar, water, orange zest, star anise, cloves, cinnamon, and vanilla paste.
Pastry Cream: Richardson's Half and half, brown sugar, vanilla extract, yolks, cinnamon, nutmeg, allspice, ginger, cardamom, cornstarch, sea salt, butter.
Croissant dough: Wheat flour, water, sugar, butter, milk powder, salt, yeast
Toppings: butter, brown sugar, wheat flour, sea salt, vanilla extract. Confectioner's sugar.
