This cake is so simple and pleasing. An understated, yet almost custard-like cake batter layered in with the local apples allows them to shine. It is simply sprinkled with cinnamon sugar on top to finish.  Local apple from Brooksby Farm in Peabody.    This cake makes a for a wonderful seasonal dessert for Rosh Hashanah or a not too sweet breakfast cake option.
