Maple Pecan Spice Cake

 This a very soft, moist sponge cake made with local sweet potato puree sourced from Heron Pond Farm in NH.  The sweet potato adds sweetness and moisture and pairs wonderfully with the brown sugar and cardamom that is featured in the crumbl swirled into the center of each cake.  These cakes are dipped in a coffee maple syrup for added moisture and depth of flavor and frosted with beautiful maple Italian buttercream which features maple syrup from Silloway Maple in VT.   Additional garnish on top is a delicious candied pecan sprinkle on top.

INGREDIENTS: 

Wheat flour, sweet potato, brown sugar, sugar, canola oil, yogurt, eggs, baking soda, vanilla extract, salt, cream of tartar, maple syrup, pecans, cardamom, coffee, lemon juice.
