Gateau Basque
Gateau Basque is a traditional French dessert from the Basque region of France made with an almond flour cookie-like crust and filled with vanilla pastry cream and jam. We have paired out pastry cream with a Vanilla Spice Plum Jam made with local plums from Cider Hill Farm In Amesbury. The crust also features a bit of our house milled whole wheat flour (wheat berries sourced from Bucks Farm in Maine).

INGREDIENTS: Crust: Wheat Flour, Almond Flour, House Milled Whole Wheat from Bucks Farm Maine, butter, sugar, eggs, yolks, baking powder, salt, almond extract and vanilla extract.
Filling: Half and half from Richardson's Farm, sugar, vanilla beans, egg yolks, butter, salt, cornstarch.
Plum Jam: local plums, sugar, star anise, vanilla bean, lemon juice.
