Strawberry Vanilla Cream Tart, Small
This is a classic pairing of strawberries and cream. House made strawberry jam makes up the base layer of this whole wheat honey graham tart shell, followed by a layer of vanilla pastry cream and a final layer of freshly whipped strawberry yogurt whipped cream. This whipped cream has a touch of tang from the Cabot Greek yogurt we have paired with strawberry puree and heavy cream. Garnished delicately with strawberry halves and dehydrated strawberry powder. Local Strawberries primarily from Cider Hill Farm in Amesbury as soon as they are available.

INGREDIENTS:
Crust: Butter, Whole Wheat Flour from Maine Grains, wheat flour, sugar, eggs, honey, molasses, and salt
Filling and Topping:
Jam: strawberries, cranberries, sugar, lemon juice
Vanilla Pastry Cream: Half and half from Richardson’s, eggs yolks, butter, sugar, vanilla bean, cornstarch.
Strawberry Whipped Cream: Heavy Cream, Greek Yogurt, Strawberry Puree
Dehydrated strawberry powder & fresh strawberries
